Italian Cookies with Honey (Struffoli)

DOUGH:

  • 3 eggs
  • 1 tbls. butter, softened
  • 1 tsp. sugar
  • 2 cups flour, sifted
  • 1/2 tsp. baking powder

In a bowl, whisk eggs, butter, 1 teaspoon sugar until foamy. Sift flour and baking powder into egg mixture. With hands, mix dough.

Divide dough into 4 pieces. Roll each piece out like a rope about the width of your index finger and 12 inches long. Cut into 1 inch pieces. Toss the pieces with enough flour to dust. Shake off excess flour.

In a deep fryer, heat oil to 375 degrees. Fry a few struffoli at a time until puffed and golden brown. Drain on a brown paper bag.


HONEY:

  • 1/2 cup sugar
  • 1 cup honey

In large sauce pan, add sugar, honey. Heat until sugar is dissolved. Keep warm over low heat. Add the fried cookies and turn until all sides of cookie is covered. Transfer cookies to a nice plate, molding them into a pyramid shape, shaping with wet hands. Sprinkle with colored sprinkles. Let set 1 to 2 hours.
